I found the solution to this problem when my 2nd child was born and I discovered the joy of 1 pot meals. Since then - we have been cooking a lot of them. So if you are looking for some healthy and quick chicken recipes stick along, this might just change your life. I really do think so.

Before I became a mother I cooked all kinds of fancy meals for me and my husband. Things changed when I became a mom. We still aimed for healthy and nutritious meals, but at the same time I was looking for recipes that would take less time to prepare and less dishes to use and wash afterwards (because who likes doing that, right?).
I found it. Actually it's not just one recipe, it's many quick chicken recipes if you are improvise and use what you like and what you have in your fridge or pantry.
One pot super quick chicken recipe
- Your favorite chicken parts. We used a whole chicken that's been cut up.
- some mushroom*
- some broccoli*
- 2 large potatoes
- 2 onions, 4 cloves of garlic
- 2 tbsp of tomato paste
- spices: salt, paprika, cumin (optional), oregano
- 2 cups of water
*Keep in mind that this recipe is very customizable, by using your favorite vegetables or what you have at home.
How to
Chop things that need chopping: potatoes, mushroom, broccoli, onion and garlic, put the chicken in the pot, add water, cover with the lid and cook it on medium (if you have time, leave it on low).
In 45 minutes to 1 hour your meal is ready. Add parsley and serve it on the plates.
YES, it's quick to prepare...
YES, it only needs 1 pot...
But did I mention It's really really delicious? The chicken is juicy, veggies have a lot of flavor and the stew part is really comforting, especially when it's so cold outside...
