No Bake Cookies are Taking Over


No Bake Cookies are taking over in our family lately BIG TIME!  It's a love relationship thankfully we all got into. I will explain you why...

I for example love that I don't have to turn my oven on, use butter, use sugar or even flour. Seriously, you guys, it can't get better than that!

Kids love them because they can help me make them and it's very customizable. And of course they love eating them, and they like that fact that mommy allows more cookies to eat.

And my husband just loves everything I put on the plate (I am a lucky wife, I know).

I won't be wrong if I will say that Christmas is cookie eating time. Am I right?

Cookies at Christmas swaps, cookies in school holiday celebrations, cookies at grandma's and of course you MUST eat the ones that "Santa didn't finish". Now that's a lot of cookies.

A lot of sugar, a lot of butter, sprinkles and all other stuff that's not very good if consumed in big amounts. Especially for children.

Don't get me wrong I am not against cookies, but I believe we can find a way to feed our little munchkins healthier without them noticing much difference. I was on the mission.  To think of something more nutritious, natural and still loveable by my kids. And you know what, I think I found it. Yayy!

My son said it's yummy! And you can't force a 2 year old to compliment something that he doesn't like, or even say that that's yummy. It's big, you guys.

No Bake Cookies Recipe

Keep in mind that these cookies are very customizable. Adjust to your family's needs and likings.

  • 1.5 cup dry apricots (or your favorite dried fruit)
  • 1/2 cup maple syrup (you can easily use honey too)
  • 1/2 cup sesame seeds (use any kind of nuts you wish)
  • 2 cups rolled oats
  • some shredded  coconut
  • 1/4 cup  Organic Tahini (it's is basically like a nut butter made from ground sesame seeds, mostly used in hummus). You can also use Peanut butter as an alternative.

How to make No Bake Cookies

1. Soak dried fruit in hot water for a minute and then blend it in the blender until becomes thick dough.
2. Warm tahini and syrup on the stove.
3. Mix all the ingredients together.
4. Transfer everything into a pan where you can press it down. Kids will love it. That's when everything sticks together. Leave it out for a little before forming the cookies.
5. Shape the cookies using  your hands or cookie cutters.

There you have it. Healthy, delicious No Bake Cookies that kids will actually LOVE.

Another thing that I love about them is that I can use some of that "cookie dough" for my morning granola. I just break it up in small pieces and put in the glass jar.
